A place that preserves memory

Within our property stands a 16th-century underground olive mill carved into the rock. For a long time it remained hidden and unused, until our family decided to recover it while respecting its original structure.

Entering the mill means descending below ground level and encountering a silent, cool space shaped by generations of work.

The millstones, basins and underground passages tell a way of producing olive oil that is completely different from today’s methods, yet still deeply fascinating.We have not turned it into an artificial museum. We chose to preserve its soul, allowing the place to continue speaking through its materials, humidity and natural scents.For us, the underground olive oil mill is a living testimony of agricultural work in Salento.
