OUR VARIETAL CHOICES

In our work we focus on olive varieties with a long and deeply rooted history in Puglia and Southern Italy. These varieties have gradually adapted to limestone soils, strong winds, intense light and the irregular Mediterranean seasons.

Each harvest brings slight variations, which we consider a richness rather than a limitation. Olive oil becomes a living expression, never identical, never standardised.

Working with historically rooted varieties also means respecting an agricultural heritage built slowly through natural selection and shared knowledge.

It is a choice that values organoleptic quality, the natural resilience of the trees and the oil’s ability to truly express the place it comes from.
