The D’A line is the first extra virgin olive oil line bottled by Tenuta D’Alba.
It originates from our family name, D’Alba, and represents an important step in our journey: putting our name on a product means taking responsibility for every choice, from tree to bottle.

The D’A line was created from the desire to tell the story of our land through three cultivars historically linked to Puglia and Southern Italy: Leccina, Picholine, and Coratina. These varieties have, over time, adapted to calcareous soils, constant winds, intense light, and the irregular Mediterranean climate, developing aromatic profiles deeply connected to the place where they grow.

Our oil is born from a rigorous selection of olives, harvested at the optimal stage of ripeness and processed quickly to preserve aromatic integrity, freshness, and structure. We oversee every stage of the supply chain: from the choice of cultivars to harvesting, milling, and bottling.

At this early stage of the project, our oil has been complemented with olives sourced from selected growers in the Ostuni area, while we await the young trees in our new groves to reach full production. This is a choice of transparency and quality: we prefer to rely on producers who share our approach rather than forcing nature’s timing.

We do not seek a uniform style. On the contrary, we have created three single-varietal oils with distinct identities—three complementary expressions of our vision of olive oil:

EQUILIBRIUM – Leccina

The natural measure of things

Equilibrium is made from Leccina olives, a cultivar historically widespread in Puglia, appreciated for its natural elegance and its ability to produce harmonious, never aggressive oils. It is a variety that naturally embodies the concept of balance: it does not chase intensity at all costs but builds a clean, smooth profile suited for mindful everyday use.

When harvested early, Leccina yields a fresher, more aromatic oil with more pronounced green notes; with more advanced ripening, it expresses sweeter, more neutral profiles. In our selection, we favor harvesting that preserves aromatic freshness without losing roundness.

Equilibrium is an oil that accompanies without overpowering, enhancing ingredients without imposing itself. It is designed for those seeking a consistent, recognizable extra virgin olive oil that is never intrusive.

AUDACIS – Picholine

L’equilibrio che osa

Audacis nasce da olive Picholine, una cultivar di origine francese che nel tempo si è adattata molto bene alle condizioni pedoclimatiche del Sud Italia. Nel nostro territorio la Picholine esprime un profilo vivace, fresco e leggermente irriverente: è un olio che porta energia, che crea movimento in bocca, che aggiunge tensione gustativa al piatto.

È un extravergine dal carattere contemporaneo, pensato per chi ama profili vegetali netti, con una buona intensità aromatica e una piccantezza viva ma pulita.
Audacis non resta mai sullo sfondo: entra in dialogo con il piatto, lo accompagna e lo sostiene, senza mai diventare invadente.

In our territory, Picholine expresses a lively, fresh, slightly irreverent profile: it is an oil that brings energy, creates movement on the palate, and adds gustatory tension to dishes.

It is an extra virgin olive oil with a contemporary character, designed for those who appreciate clear vegetal profiles, good aromatic intensity, and a vibrant yet clean pungency.

Audacis never stays in the background: it engages in dialogue with the dish, accompanies it, and supports it without ever becoming invasive.

Terrae is made from Coratina olives, the symbolic cultivar of Puglia. It is a variety that thrives in hot, dry climates and has developed an extraordinary ability to concentrate polyphenols, antioxidants, and structure over time. Coratina is internationally known for its intense profile and longevity: an oil that does not fear time but moves through it.

Terrae is an extra virgin olive oil with great personality: bitterness and pungency are the protagonists, supported by a deep, decisive vegetal aromatic profile. It is the oil that tells the most authentic and rugged side of our land: calcareous soils, wind, intense light, and plants that resist and concentrate energy.
